Manually pressed, matured for 400 days at low temperatures. Similar to Pecorino, which is made with sheep’s milk.
CHARACTERISTICS OF THIS CHEESE:
Average acidity, pearl color and hard rind. Slightly spicy flavor. Presented in 3kg pieces or 250g wedges.
SERVING TIPS
Pair it with a good riesling or a very light red. Use in fillings, handmade pasta, gratin, pesto sauce. It is especially yummy with a very natural honey yarn.
