From pure goat’s milk naturally fermented, this cheese coagulates very slowly (minimum 12 hours) and is drained in low temperatures. Extremely creamy, smooth and tasty, it is the most versatile cheese in the portfolio.
It is usually presented as a paste in pots of 150, 250 or 500g. It is the most classic and the easiest to find, but it involves secrets and very special care to ensure an absolutely smooth pate, without any lumps, and a perfect acidity.
